**About the broth:** Clear chicken broth infused with katsuobushi, house-made shoyu & tamari tare (amakuchi), fresh diced ginger. **About the noodles:** A generous portion of noodles served over ice, with shiso, lime, benishōga, wasabi, julienned leek, aburi-style duck chashu, and crispy leek topping.
